This recipe replaces fila cheese squares and complies with our new dietary guidelines.
Preheat oven to 375° F.
In a mixer, beat ricotta, chevre, feta, flour, eggs, nutmeg, and pepper until well blended. Stir in parsley.
Butter the bottom of a rectangular pan. An 11 inch pan works well.
Place ¼ C of cheese mixture onto a wrap. You want it off center. Spread it in the shape of a log. Roll the wrap over the cheese, and roll up like an enchilada. Place in buttered pan. Repeat with remaining wraps, laying them side by side. Brush tops with melted butter.
Bake, uncovered, in a 375° F oven for 20-30 minutes.
